CAKE TIME!! And a little food news

rainbow cake

This is what happens when ones birthday always falls around that Pride time in SF. Seems people have other ideas and things to do. Nowadays I just fall in line and while I mostly skip the festivities (you know, loud, crowds and HOT!) I'll still eat the cake! While it was the traditional red velvet this year, the SO made these little festive layer things because they looked cool and would be a baking kind of challenge I guess you could say. Either way, IT'S CAKE! WITH FROSTING! Like I'm gonna pass all that up? Then you don't read this blog enough! That is a lot of exclamation points! Turns out these were colorful, lightly vanilla flavored layers interspersed with a fluffy butter cream frosting. Something I might normally eschew in favor of cream cheese or something, but this had heavy whipping cream infused in it to give it more fluff and creaminess. This is what I mean when I say I like heft in my desserts, thick moist cake and loads and loads (and loads) of frosting to bring it all together. Sure, this can result in a sugar crash or two, but it is all worth it for the baked goodness---and icing. Good on the SO for pulling this baking challenge off! It is a load of sugar to get your week/morning started along with some food news of the sweet and not so sweet variety.
